Chocolate rice pudding

INGREDIENTS

1/3 cup medium-grain rice

1/4 cup cocoa powder

3 1/4 cups skim milk

1/4 cup caster sugar

canned pears, to serve

METHOD

Step 1

Place rice into a sieve. Rinse under cold water until water runs clear. Transfer rice to a heavy-based saucepan.

Step 2

Whisk together cocoa and 1/4 cup of milk. Stir in remaining milk and sugar.

Step 3

Add milk mixture to rice. Bring to the boil over medium heat, stirring. Reduce heat to low. Cover. Cook for 35 minutes, stirring every 5 minutes. Remove lid. Cook, stirring occasionally, for 10 minutes. Serve pudding with pears.
