Yam flour (poundo yam) is a well known and well used convenience in Nigeria but many have sticked only to the general way of using it which is the vigorous turning in a boiling pot of water over heat and eating with the regular soups, Chef Ademola Aliu Babatunde (Young chef) has just found other ways Yam flour(Poundo yam) can be used and one of them is "POUNDO YAM PUDDING" and here is the very simple recipe and method...
RECIPE:
Yam flour 165g
Margarine 200g
Baking powder. 1teaspoon leveled
Eggs. 5 small or 4 large
Sugar. 125g
METHOD:
1. In a bowl cream the butter and sugar till almost white.
2. Mix baking powder and the poundo yam and set aside.
3. Add half of the beaten eggs and mix gently.
4. Add the poundo yam and mix until evenly mixed
5. Add flavour of choice and add the rest of the beaten eggs and mix gently until the mixture is even.
6. Portion in greased individual moulds and steam over medium heat for 30-40 mins.
7. Take off the heat and serve with your choice of syrup or custard sauce.
It's a very good and yummy pudding, let's try to make good use of our Nigerian food so as to make them sell even outside our beloved country.
